Although not created with Unity, this is my best and most favorite project (also the only one published). It started with creating a mathematical model, that emulates Stock exchange price movement based on multiple interacting variables and can run on handheld devices. Its implementation was another challenge of its own, but I succeeded. The basic principle of the game is to interactively teach people a bit about how the stock market works. The game now includes charts showing past prices and player action history, after user requests.
